Beetroot Hummus

Beetroot Hummus

Red vegetables are an excellent source of antioxidants and great for liver function. This beetroot hummus is a beautiful, earthy version of the traditional chickpea variety. You can also experiment with adding fresh herbs such as tarragon or dill.

What you'll need

  • 500 g beetroot
  • 3 tablespoons unhulled tahini
  • 1 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon raw apple cider vinegar
  • 2 teaspoons ground cumin
  • ½ teaspoon sea salt
  • seed crackers to serve
  • raw vegetables (such as carrot, fennel, celery and cucumber) cut into bite-sized pieces, to serve

Method

Preheat the oven to 200°C.

Wrap the beetroot in foil and roast in the oven for 30–40 minutes, or until tender. Set aside to cool.

When cool enough to handle, peel and roughly chop.

Place the beetroot in a food processor with all the other ingredients. Process until smooth.

Transfer to a bowl, adjust the seasoning and serve with seed crackers and raw vegetables.

Notes

The hummus can be stored in the fridge for up to 5 days.

Place the beetroot into the All-in-one Kitchen Appliance bowl with all other the ingredients and blend for 20 seconds/speed 8, increasing speed gradually.
Scrape down the sides of the bowl, and blend again for a few seconds on speed 6 if needed.

Transfer to a bowl, adjust the seasoning and serve with seed crackers and raw vegetables. The hummus can be stored in the fridge for up to 5 days.
