Mayonnaise

This homemade mayonnaise is so simple and so delicious you will never need to buy another one again in your life.

What you'll need

  • 2 organic free-range eggs (room temperature) 1 whole egg, 2 yolks
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 teaspoons Dijon mustard
  • 1 ½ cups macadamia oil

Method

Combine the egg and egg yolks, lemon juice, mustard, and 1 teaspoon of sea salt in a food processor or blender and process for 1 to 2 minutes, until combined.

With the food processor or blender running, slowly pour in the oil – the oil will begin to emulsify. Keep pouring slowly and consistently in a thin stream, until the mixture becomes thick and looks like mayonnaise.

Refrigerate immediately, for at least 5 minutes before using.

Notes

Mayonnaise will keep for to 4 to 5 days in the refrigerator.

What you'll need

  • 2 ripe avocados
  • 2 tablespoons raw apple cider vinegar
  • 60 mls extra virgin olive oil
  • 1 ½ tablespoons lemon juice
  • 1 pinch sea salt to taste

Method

Add all the ingredients in a food processor or blender and blend until smooth and creamy. Chill before serving.


Notes

It will keep in the fridge for a minimum of 2–3 days.

Place the egg, egg yolks, vinegar, lemon juice, mustard and 1 teaspoon of salt into the All-in-one Kitchen Appliance bowl.

Insert the butterfly whisk and mix for 1 minute/speed 4.

With the All-in-one Kitchen Appliance blades spinning on speed 4, slowly drizzle oil in through hole in lid (with MC on) in a thin, steady stream, until the mixture becomes thick and looks like mayonnaise.

This process should take approx. 5 –6 minutes.


Notes

The mayonnaise will keep for to 4 to 5 days in the refrigerator.
